What Are Microgreens?

Microgreens are simply vegetables, flowers, and herbs harvested at an early stage, typically when they are about 7 to 21 days old. They come in a variety of flavors, from mild to sour to spicy, and a spectrum of vibrant colors from green to deep purple.

Microgreens can be harvested from various plants including broccoli, sunflowers, peas, and so many more.

The True Leaf Stage

As a plant emerges from its seed, it begins with two symmetrical green leaves called cotyledons. Microgreens are harvested just days after the cotyledons appear and before the true leaves fully develop. 

True leaves, which are the third set of leaves, showcase the distinct shapes and characteristics of the specific plant. Harvesting before true leaves develop maintains microgreens' tender texture and concentrated taste, preserving their unique traits. 

For example, arugula microgreens deliver a bold peppery kick, while radish microgreens boast a notable pink stem and a spicy flavor. Most importantly, this early stage before rapid growth is when microgreens are potent nutrient powerhouses.
